Black and white photography is all about contrast and leading lines. It is not a desaturated colour photo — though if you know what you are doing, that is a good process. Even then I would not desaturate, as you can use the colours in a B&W environment as filters. Fun fact: after a while I could look at a colour scene and already see the B&W image.
